Today, as the Global Wine and Beverage Manager at Dream International, Vincent continues to share his passion by collaborating with Château Pech-Latt, located in the Corbières region in the south of France.

With a ruby color and vivid reflections, the Grenache, the predominant grape variety and the heart of the project, brings power and structure to "REFLEXION". It presents notes of ripe red fruits with a rounded profile. The Carignan contributes pleasant freshness and beautiful acidity. The Syrah complements this wine with pronounced aromas of black fruits, spices, and a subtle hint of violet.

"Charming nose with pomegranate juice, rose, freesia, subtle aromas of gingerbread and redcurrant jam, richness of bay leaf and aromas of pine nut pesto, offering a lot of mouth-watering complexity.
The palate is endowed with magnificent energy directed towards freshness, superb tannic dimension that grounds the wine in a promising aging potential thanks to a mastered balance, crafted for gastronomy. Roasted pigeon on the breast, madras spice crust, glazed carrots, and bissap sauce."

REFLEXION » is a red wine producing 5,000 bottles, crafted from a blend of four grape varieties: 45% Grenache - 35% Carignan - 17% Syrah - 3% Mourvèdre -14,5% Cinsault

winemaking at the Château

Château Pech-Latt, by adopting meticulous winemaking methods, illustrates a deep commitment to quality and the authentic expression of the terroir. Harvest at optimal phenolic maturity, parcel vinification of a majority of the finest Grenache and a fine part of Carignan for this REFLEXION cuvée, 100% destemmed harvest, traditional maceration for 3 days, followed by racking and gentle, prolonged cold pressing, end of fermentation at 18 degrees Celsius for 7 days. Racking after malolactic fermentation (MLF) and a short 5-month aging in stainless steel tanks.
